Quinoa and Veggie Mason Jar Salad

Easy to prepare in advance, this salad is stored in a mason jar for a quick, ready-to-eat nutritious meal that is also perfect for taking on the go. 

Ingredients: 

  • 1 cup cooked quinoa 
  • 1 cup cherry tomatoes, halved 
  • 1 cucumber, diced 
  • 1 bell pepper, diced 
  • 1/2 red onion, diced 
  • 1 cup canned corn, drained 
  • 1 avocado, diced 
  • 1 cup mixed greens 
  • 1/4 cup chopped fresh cilantro 
  • 1/4 cup olive oil 
  • 2 tablespoons apple cider vinegar 
  • 1 tablespoon Dijon mustard 
  • Salt and pepper to taste 

Instructions: 

  1. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper to make the dressing. 
  2. In a mason jar, layer the ingredients starting with the dressing at the bottom. 
  3. Add cherry tomatoes, cucumber, bell pepper, red onion, corn, and quinoa. 
  4. Top with diced avocado, mixed greens, and fresh cilantro. 
  5. Seal the jar and store in the refrigerator until ready to eat. Shake well before eating to distribute the dressing.
