Chickpea Salad Wrap

Ingredients:
- 1 can of chickpeas, drained and rinsed
- 2 tablespoons vegan mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup chopped fresh parsley
- Whole wheat tortillas or wraps
- Lettuce leaves
Instructions:
- In a medium bowl, mash the chickpeas with a fork or potato masher until mostly smooth with some chunks remaining.
- Add vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix well.
- Stir in the diced celery, red onion, and parsley.
- Lay a lettuce leaf on a tortilla or wrap, then spoon some chickpea salad onto the lettuce.
- Roll up the tortilla, tucking in the sides as you go. Cut in half if desired.
- Wrap tightly in foil or parchment paper for easy transport.
