Chickpea Salad Wrap

Packed with nutrients, essential healthy fats, and fiber, chickpeas join forces with whole grains and vegetables to support your longevity lifestyle.  Make yourself a quick nutritious lunch, or prep a few in advance, grab, and go! 


  • 1 can of chickpeas, drained and rinsed 
  • 2 tablespoons vegan mayonnaise 
  • 1 tablespoon Dijon mustard 
  • 1 tablespoon lemon juice 
  • 1 teaspoon garlic powder 
  • Salt and pepper to taste 
  • 1/2 cup diced celery 
  • 1/4 cup diced red onion 
  • 1/4 cup chopped fresh parsley 
  • Whole wheat tortillas or wraps 
  • Lettuce leaves 


  1. In a medium bowl, mash the chickpeas with a fork or potato masher until mostly smooth with some chunks remaining. 
  1. Add vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix well. 
  1. Stir in the diced celery, red onion, and parsley. 
  1. Lay a lettuce leaf on a tortilla or wrap, then spoon some chickpea salad onto the lettuce. 
  1. Roll up the tortilla, tucking in the sides as you go. Cut in half if desired. 
  1. Wrap tightly in foil or parchment paper for easy transport.
