Quinoa and Veggie Mason Jar Salad

Easy to prepare in advance, this salad is stored in a mason jar for a quick, ready-to-eat nutritious meal that is also perfect for taking on the go.
Ingredients:
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cup canned corn, drained
- 1 avocado, diced
- 1 cup mixed greens
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions:
- In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper to make the dressing.
- In a mason jar, layer the ingredients starting with the dressing at the bottom.
- Add cherry tomatoes, cucumber, bell pepper, red onion, corn, and quinoa.
- Top with diced avocado, mixed greens, and fresh cilantro.
- Seal the jar and store in the refrigerator until ready to eat. Shake well before eating to distribute the dressing.
