Spicy Lentil Wraps

Lentils provide a robust source of plant-based protein and fiber, the fresh veggies add crunch and nutrients, and the tahini-sriracha dressing brings a nutritious (and flavorful!) kick. Prepare ahead of time and enjoy a convenient, healthy meal during your busy workday.
Ingredients:
- 1 cup cooked lentils (green or brown)
- 1/2 cup shredded carrots
- 1/2 cup diced red bell pepper
- 1/2 cup diced cucumber
- 1/4 cup red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- 2 tbsp tahini
- 2 tbsp lemon juice
- 1 tbsp sriracha sauce
- 1 tsp cumin powder
- Salt and pepper to taste
- 4 whole grain tortillas or wraps
- 1 cup baby spinach leaves
Instructions:
- In a large bowl, combine cooked lentils, shredded carrots, bell pepper, cucumber, red onion, and cilantro.
- In a small bowl, whisk together tahini, lemon juice, sriracha sauce, cumin powder, salt, and pepper.
- Pour the dressing over the lentil mixture and toss to coat evenly.
- Lay out the tortillas and place a handful of baby spinach leaves on each.
- Spoon the lentil mixture onto the spinach leaves.
- Roll up the tortillas, tucking in the sides as you go to form a wrap.
- Cut in half and serve or wrap tightly in foil for an on-the-go meal.
