Spicy Lentil Wraps

Ingredients:

  • 1 cup cooked lentils (green or brown)
  • 1/2 cup shredded carrots
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced cucumber
  • 1/4 cup red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tbsp sriracha sauce
  • 1 tsp cumin powder
  • Salt and pepper to taste
  • 4 whole grain tortillas or wraps
  • 1 cup baby spinach leaves

Instructions:

  1. In a large bowl, combine cooked lentils, shredded carrots, bell pepper, cucumber, red onion, and cilantro.
  2. In a small bowl, whisk together tahini, lemon juice, sriracha sauce, cumin powder, salt, and pepper.
  3. Pour the dressing over the lentil mixture and toss to coat evenly.
  4. Lay out the tortillas and place a handful of baby spinach leaves on each.
  5. Spoon the lentil mixture onto the spinach leaves.
  6. Roll up the tortillas, tucking in the sides as you go to form a wrap.
  7. Cut in half and serve or wrap tightly in foil for an on-the-go meal.
