Sweet Potato Casserole with Pecan Streusel

For the sweet potato base:
- 4 large sweet potatoes (about 4 cups mashed)
- 1/4 cup almond milk (or any plant-based milk)
- 1/4 cup maple syrup
- 2 tbsp coconut oil (melted) or vegan butter
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- Pinch of salt
For the pecan streusel topping:
- 1 cup pecans (roughly chopped)
- 1/2 cup rolled oats
- 1/3 cup almond flour (or any flour)
- 1/4 cup coconut sugar (or brown sugar)
- 1/4 cup coconut oil (solid, not melted) or vegan butter
- 1/2 tsp ground cinnamon
- Pinch of salt
Instructions:
- Cook the sweet potatoes:
- Preheat your oven to 375°F (190°C).
- Peel the sweet potatoes and cut them into large chunks.
- Boil the sweet potato chunks in a large pot of water until they are tender (about 15-20 minutes). Drain and let them cool slightly.
- Mash the sweet potatoes:
