  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • Pinch of salt

For the pecan streusel topping:

  • 1 cup pecans (roughly chopped)
  • 1/2 cup rolled oats
  • 1/3 cup almond flour (or any flour)
  • 1/4 cup coconut sugar (or brown sugar)
  • 1/4 cup coconut oil (solid, not melted) or vegan butter
  • 1/2 tsp ground cinnamon
  • Pinch of salt

Instructions:

  1. Cook the sweet potatoes:
    • Preheat your oven to 375°F (190°C).
    • Peel the sweet potatoes and cut them into large chunks.
    • Boil the sweet potato chunks in a large pot of water until they are tender (about 15-20 minutes). Drain and let them cool slightly.
  2. Mash the sweet potatoes:
    • Transfer the cooked sweet potatoes to a large mixing bowl and mash them until smooth. You can use a potato masher or a hand mixer.
    • Add the almond milk, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, and a pinch of salt. Mix until well combined and smooth.
